Even the best knives loose their edge through use. They should therefore be regularly sharpened using a sharpening steel - except for knifes that have a serrated edge (eg: bread knife).
Tips for use:
Holding the knife at a 20o angle, draw each side of the blade alternatively across the steel, ensuring you maintain and even pressure.
